Pasta Time









Ingredients:

Pasta
Olive Oil
1 Shallot, Diced
1 Clove of Garlic, Diced
1 cup of Cherry Tomatoes,
Roasted Red Peppers, Chopped
1/4 fresh Basil
1 teaspoon of Smoked Paprika
Salt
Black Pepper
Fresh Rocket
Fresh Mozzarella Cheese, Diced
Parmesan Cheese

Hello Everybody, have a nice Wednesday. I hope you enjoy my recipe. It looks like "summer in a bowl", and it's utterly delicious.

1. Cook the pasta.
2. Whilst the pasta cooks, heat a teaspoon of olive oil in a large pan, medium heat.
3. Add the shallot and garlic and cook until golden.
4. Add tomatoes, roasted red peppers, basil, smoked paprika, salt and pepper, and stir.
5. Once the tomatoes have soften add the rocket and drizzle another teaspoon of olive oil.
6. Turn the heat down, and stir in the mozzarella cheese.
7. Add the cooked pasta and top it with parmesan cheese.
8. Serve and enjoy.
